USE OF NUTRITIONAL EDUCATION TO PROMOTE WELL-BEING FOR ALL PEOPLE OF ALL AGES: “NUTRIEDUCAR@PRENDIENDO” SERVICE-LEARNING PROJECT: 2ND EDITION

Abstract:
Introduction:
Nutrieducar@prendiendo is a service-learning (S-L) project that started in September 2022. This project aims to train students in social responsibility, scientific communication, and professional ethics and contribute to improving health in terms of nutrition for different populations. From the learning point of view, it focuses on increasing students' motivation, improving their creativity, group work ability, information management and written and oral transmission, and nutritional education, adapting the selected information to the level of the population in a didactic and gamified way. This second edition (2nd edition) is focused on applying the project to the curricular academic internships during the last year of the degree and as mandatory activities in specific subjects. In addition, during this 2nd edition, the education materials designed during the 1st edition are disseminated through social networks to spread the nutrition content and materials to society.
Methodology:
This 2nd edition started in September 2023 and is expected to end in September 2024. Students of curricular academic practices of the degree in Human Nutrition and Dietetics (HND), Pharmacy and the Double degree in Pharmacy and HND were included. The HND students (degree and double degree) have to 1) develop educational materials (short videos, games, infographics, reels, etc.) mainly centred on balanced diet and sustainability and 2) present these materials in primary and secondary schools and cultural events. The Pharmacy students have to design short videos in small groups about common nutritional diseases and preventing drug-nutrient interactions. Regarding the subjects to implement the project as mandatory activity, Bioavailability of nutrients (a) and Nutrition Education Programs (b) were selected. All enrolled students had to develop an infographic or game including specific content taught in the subjects, working in small groups of 2-4 participants. Finally, the materials from the 1st year of the project are being distributed through Twitter ‘X’ and Instagram. The project evaluation includes satisfaction surveys, learning achievements, and the assessment of the nutrition education material using specially designed questionnaires where the higher the score, the better the results.
Results:
The results presented in this work correspond to the period from September 2023 to April 2024. Until now, 43 students have participated in subjects (a) and (b); they developed 14 infographics, which were shared in class. Twelve students from HND (degree and double degree) designed and developed 20 workshops, 5 in primary school and 15 in secondary school and one event during Science Week with 450 receptors between children and adults. Two hundred Pharmacy students are working on short videos. Thirty infographics and videos were spread on social networks.
Conclusions:
With the changes introduced to the first edition, greater student adherence and a greater reach of nutritional information to society are expected.Keywords:
