THE IMPACT OF AN EDUCATIONAL VIDEO ON THE ACADEMIC SUCCESS IN FOOD SCIENCE AND TECHNOLOGY STUDIES

Abstract:
The Universidad Politécnica de Valencia has developed the Plan Docencia en Red, a program aiming to support the elaboration and use of multimedia learning material (videos and others).
This study was conducted with first year students of the Grado en Ciencia y Tecnología de Alimentos (Food Science and Technology Degree) during the first half of the academic term 2010/2011. The course during which the study was performed was Fundamentos Químicos en Ciencia y Tecnología de Alimentos (Chemical Bases in Food Science and Technology).
During the term 2009/2010, the teachers of this course had produced an educational video to encourage the self-regulated learning of their students. In this video, the experimental procedure to determine the specific heat of ethanol was described. Before the recording, some planning was done, and the following items were included: aim, introduction, materials, methodology and results. The edited video was shorter than 6 minutes.
The next step to be undertaken was to use the video and evaluate its actual effect on the learning process. Our students were urged to watch the video before the practical lesson took place. At the end of the course, they answered an opinion poll on diverse aspects, all of them related to the video (usefulness, difficulty, structure…). The actual impact of these answers on the final qualifications will be described in our contribution.Keywords:
